Shrimp Curry
Ingredients
1 tsp. margarine
1 small onion, chopped
1/4 C. bell pepper, chopped
1 clove garlic, minced
3/4 tsp. curry powder, or to taste
1/4 tsp. ginger
1/2 tsp. chili powder
1/2 C. yogurt
3/4 pound shrimp, cooked and peeled
Cooking Instructions
In a nonstick saucepan, melt margarine. Add onion, green pepper, garlic, and spices; sauté over medium heat for 3 to 4 minutes. Add yogurt and shrimp. Cover and cook over low heat until hot, stirring occasionally. Serve over rice.
