Shrimp Crabmeat Casserole
Ingredients
1 lb. shrimp, fresh or frozen
1/2 tsp. cayenne pepper
1/2 lemon, sliced
1/2 onion, sliced
1 stalk celery, cut up
1 tsp. salt
NO WATER
Cooking Instructions
Place shrimp and all seasonings except salt in a glass dish. Cover with wax paper. Cook on high 7 minutes, until all shrimp are pink. Stir at about half of cooking time. Add salt. Test for doneness. Shrimp should be tender and pink. Let stand 3 minutes. Peel shrimp and add to: 1 C. mayonnaise 1/2 C. green pepper, chopped 1/2 C. onion, chopped 1/2 C. celery, chopped 1 tsp. Worcestershire sauce 1 tsp. paprika 1/2 C. seasoned or buttered bread crumbs Salt & pepper to taste Place green pepper, onion and celery in 2 cup measure. Cover and cook on high 2 minutes, until just wilted. Combine all ingredients in a 3 quart casserole. Sprinkle top with bread crumbs. When ready to serve, heat on high 6 to 8 minutes. Turn dish once while cooking.
