Shrimp And Cilantro Dumplings
Ingredients
1 pound shrimp, raw
2 oz. cilantro, chopped
1/2 tsp. salt
1 tsp. sugar
1/4 tsp. white pepper
1 tsp. sesame oil
2 tsp. cornstarch
1 egg white
1 pound wonton wrappers
soy sauce
Cooking Instructions
De-vein shrimp and chop fine. Combine shrimp, cilantro, salt, sugar, white pepper, sesame oil, cornstarch and egg white. Trim wonton skin to form circles. Place 1 tsp. filling in center of circle. Brush egg white along edge. Fold over to form a half circle, or dampen edge with water, fold, and they will seal. For pot stickers, heat large nonstick fry pan to high heat. Add 1 Tbls. oil. Turn heat to medium-low. Add 10 dumplings. Cook, turning 2 to 3 times, until both sides are light brown. Add 2 Tbls. water to pan. Cover and cook until water is fully absorbed. Repeat process until all dumplings are cooked. For dumplings, drop into boiling water. Do not overcrowd. When water comes back to a boil, turn down heat; simmer for 4 to 5 minutes. Remove with a slotted spoon.
