Shredded Carrot And Raisin Salad
Ingredients
1 pound carrots, peeled and shredded
1-1/2 C. thinly sliced, cored, peeled apples
1/4 C. dark raisins
1/2 C. plain low fat yogurt or sour cream
1/3 C. skim milk
1 Tbsp. lemon juice
1-1/2 tsp. Equal, or 5 packets Equal sweetener, or 3-1/2 Tbsp. Equal
Spoonful
1/4 tsp. ground nutmeg
1/4 tsp. ground cinnamon
Cooking Instructions
Combine carrots, apples and raisins in large bowl. Combine remaining ingredients. Spoon over carrot mixture; toss to coat. Refrigerate until chilled.
