Shashlyk
Ingredients
3 lbs. boneless leg of lamb, trimmed of fat and cut into 1 1/2 inch cubes
1 med. onion, peeled and minced
3 Tbsp. fresh lemon juice
Salt and pepper to taste
2 med. onions, peeled and cut into chunks
Cooking Instructions
Put lamb in large bowl. Add minced onion, lemon juice, salt, and pepper; stir. Allow to marinate at least 2 hours or overnight in refrigerator. When ready to cook, thread lamb cubes, alternating with chunks of onion on skewers. Broil over hot coals or under broiler for 12 minutes or longer, turning once during the cooking. Serves with fresh tomato wedges.
