New England Fish Chowder 1
Ingredients
1/4 C. salt pork, diced fine
2 med. onions, chopped fine
4 med. potatoes, cubed
3 C. boiling water
1 1/2-2 lb. any white fish fillets,
cut into bite-size pieces
1 1/2 tsp. white pepper
2 (13 oz.) cans evaporated milk
Cooking Instructions
In heavy pan saute salt pork and onions until pork pieces are crispy brown. Add potatoes, water, salt and pepper. Cover pan. Cook 10-15 minutes. Add fish, cook 5-10 minutes more. Stir in evaporated milk, heat thoroughly without boiling.
