Seafood Salad
Ingredients
1/2 pound de-veined shrimp, shelled, cooked, chilled, cut in 2-inch pieces
1 Tbsp. green onion, minced
3 Tbsp. diet salad dressing
3 Tbsp. diet French dressing
1/2 C. almonds, chopped
1 C. low fat cottage cheese
2 C. lettuce, torn up
1 tomato, cut in wedges
1 tsp. parsley sprigs, chopped fine
Cooking Instructions
Mix first six ingredients. Divide evenly on lettuce. Garnish with tomato and parsley.
