Santa Fe Chicken Avocado Melt
Ingredients
4 Tbsp. mayonnaise
2 Tbsp. freshly chopped cilantro leaves, divided
1/2 Tbsp. freshly squeezed limejuice
salt to taste
pepper to taste
2 slices sourdough bread, lightly toasted (thick slices)
2 cooked skinless, boneless chicken breast halves
1 tomato, sliced
1 avocado, peeled and sliced
3 oz. sliced lorraine cheese
Cooking Instructions
Combine mayonnaise, 1-1/2 Tbls. cilantro, lime juice, salt and pepper. Spread on top of bread. Place chicken breast on bread. Layer tomatoes, avocado and Lorraine cheese. Broil sandwich until cheese melts. Sprinkle with remaining cilantro.
