Salmon Loaf
Ingredients
nonstick vegetable cooking spray
15-1/2 oz. canned salmon, undrained
2 eggs, beaten
2 C. soft bread cubes, or 1/3 C. breadcrumbs
2 Tbsp. fresh chopped parsley
1/8 tsp. pepper
1 small onion, chopped
2 Tbsp. lemon juice
Cooking Instructions
Preheat oven to 350 degrees F. Generously spray an 8-1/2 by 2-1/2 inch loaf pan with vegetable spray. In a large bowl, flake salmon, removing bones and skin. Add all remaining ingredients and mix well. Press into loaf pan. Bake for 50 to 60 minutes ,or until golden brown and toothpick comes out clean. Let stand 5 minutes. Loosen edges and lift out of pan onto serving platter. Cut into desired slices.
