Salmon Au Gratin
Ingredients
2 C. canned salmon
2 Tbsp. grated onion
1/4 lb. American cheese, grated
3 Tbsp. butter
1 beaten egg
1/2 C. milk
1 C. cracker crumbs
1/4 C. chopped green pepper
1/4 tsp. salt
1/4 tsp. paprika
Juice of 1 lemon
Cooking Instructions
Flake fish and remove bones (or mash well) and skin. Add crackers, onion, green pepper, seasoning, juice, egg and mix well. Butter casserole, layer salmon mixture, then layer cheese and butter, then salmon, top with cheese. Bake 30 minutes at 350 degrees. Serves 4.
