Sweet And Sour Chicken Salad
Ingredients
3/4 pound boneless skinless chicken breast, cooked and cut into 2-inch cubes
1 C. celery, diagonally sliced
2/3 C. snow peas, trimmed
1/3 C. red bell pepper, seeded and diced
2/3 C. apples, preferably Gala, unpeeled and diced
2 Tbsp. vinegar plus 2 tsp.
2 Tbsp. canola oil plus 2 tsp.
1 Tbsp. sugar plus 1 tsp.
3/4 tsp. paprika
3/4 tsp. celery seed
salt and pepper, to taste
Cooking Instructions
Combine all salad ingredients. Whisk together dressing ingredients. Pour dressing over salad, and serve.
