Marinated Cucumber Salad
Ingredients
1/2 C. Italian dressing, commercial low calorie
1/8 tsp. pepper
1 medium cucumber, peeled, thinly sliced
1/2 small onion, thinly sliced
1/4 C. radishes, thinly sliced
2 Tbsp. fresh parsley, chopped
Cooking Instructions
Combine Italian dressing and pepper in a medium bowl, stirring well. Add Cucumber, onion, radishes, and parsley. Toss gently to coat. Cover and marinate in refrigerator at least 4 hours. Serve salad, using a slotted spoon.
