Dijon Chicken Salad
Ingredients
1 C. low sodium chicken broth
1 package (4-serving size) JELL-O Brand Lemon Flavor Sugar Free Gelatin
3/4 C. cold water
1 Tbsp. vinegar
1/4 tsp. black pepper
1/4 C. plain low fat yogurt
2 Tbsp. reduced calorie sour cream
1 Tbsp. Dijon style mustard
1 C. finely chopped cooked chicken breast
1 C. finely chopped celery
1/2 C. chopped green or red pepper
Cooking Instructions
Bring chicken broth to a boil in small saucepan. Completely dissolve gelatin in boiling broth. Add water, vinegar and black pepper. Chill until slightly thickened. Stir in yogurt, reduced calorie sour cream and mustard. Chill until slightly thickened. Stir in remaining ingredients. Spoon into 3 individual plastic containers, or serving dishes. Chill until firm, about 2 hours.
