Rutabaga Puree
Ingredients
1 rutabaga, or turnips (1 pound either used)
1 medium orange sweet potato
1/4 tsp. red pepper
1/2 C. nonfat dry milk powder
3 Tbsp. fresh parsley, chopped
Cooking Instructions
Peel and dice rutabaga and sweet potato; place in saucepan. Cover with water; bring to a boil. Cover and simmer until tender. Drain, reserving in little water. Place vegetables in a blender or food processor fitted with metal blade; process to a puree. Add cayenne, nutmeg, and dry milk; process to blend. Re-warm in saucepan with some reserved water, if necessary. Garnish with parsley to serve.
