Ruby Fruit Compote
Ingredients
1 can red cherries, tart, water packed (1 pound)
1/2 C. Sugar Twin
1 Tbsp. cornstarch
1/4 tsp. salt
1 Tbsp. lemon juice
4 drops red food coloring
1 tsp. angostura bitters
1 tsp. almond flavoring
1 pint strawberries, whole fresh, or 2 C. strawberries, frozen, no sugar
1 Tbsp. sour cream, fat free, or vanilla yogurt (optional)
Cooking Instructions
Drain cherries, reserving liquid. Add water to cherry juice to make 1-1/2 C.. Blend sweetener, cornstarch, salt, and cherry juice mixture. Cook, stirring, until thickened and bubbly. Add lemon juice, food coloring, flavoring and fruits. Chill. If desired, top with sour cream or yogurt.
