Rosemary Lyonnaise Potatoes
Ingredients
1 pound potatoes
2 Tbsp. low fat spread
1 Tbsp. rosemary, finely chopped
1 garlic clove, crushed
1 small onion, chopped
2 Tbsp. skim milk
sea salt
black pepper, freshly ground
Cooking Instructions
Peel and thinly slice potatoes. Put low fat spread, rosemary, garlic, and onions in an8- inch, shallow dish. Cook on high 3 minutes, until soft. Stir in skim milk, sea salt, and freshly ground black pepper. Add potatoes, arranging them neatly in dish. Cover and cook on medium12 to 15 minutes, until potatoes are soft. Brown under broiler, if desired.
