Roast Wild Duck
Ingredients
2 wild mallard ducks
1 tsp. salt
1/2 tsp. pepper
1/4 tsp. rosemary leaves
1 med. onion, chopped
1 med. apple
2 stalks celery
1/2 C. butter
1/2 tsp. pepper
1/4 tsp. rosemary leaves
Cooking Instructions
Heat oven 350 degrees. Clean ducks; pat dry. Stir together salt, 1/2 teaspoon pepper, and 1/4 teaspoon rosemary leaves. Sprinkle in cavity and on outside of each duck. Place half onion, apple and half celery in each cavity. Place duck in shallow roasting pan. Roast 40 minutes. Baste duck with butter and rosemary while roasting until golden brown.
