Rich Boiled Fruit Cake
Ingredients
8 ounces flour
6 ounces margarine
6 ounces sugar
4 ounces currants
4 ounces raisins
4 ounces sultanas
1 tsp. mixed spices
1 tsp. baking soda
1/2 tsp. ground ginger
1/2 pint water
2 large eggs
Cooking Instructions
Place the margarine, sugar, fruit, and water into saucepan. Bring to a boil and simmer for approximately 10 minutes. Leave to cool. Sieve flour, spices, and baking soda and add to contents of saucepan. Beat eggs into mixture and pour into a greased and lined 7 inch square baking pan. Bake at 320 for 75 minutes.
