Orange Wild Rice 2
Ingredients
1 1/2 C. wild rice
3 C. chicken broth
3 Tbsp. grated fresh orange zest or 1 Tbsp. dried zest
2 Tbsp. fresh orange juice
1 tsp. salt
1 Tbsp. unsalted butter
1/2 C. chopped pecans to 3/4 C. toasted
1/4 C. chopped scallions
1/4 C. chopped fresh Italian parsley packed
Cooking Instructions
Rinse the wild rice in a strainer under cold running water. In a crock pot, combine the rice, broth, orange zest and juice, salt and butter. Cover, set on high, and cook until the kernels are open and tender but not mushy, 2 to 3 hours. Stir in the pecans, scallions and parsley and serve.
