Garden Rice Salad
Ingredients
1 1/2 C. brown rice, cooked
1 1/4 C. tomatoes, chopped
3/4 C. peas, lightly cooked
1/4 C. green onions, chopped
1 Tbsp. pine nuts
2 Tbsp. lemon juice
1 tsp. olive oil
1/4 tsp. black pepper
1 pinch garlic powder
1/2 tsp. oregano
1/2 tsp. basil
Cooking Instructions
Toss together the salad ingredients in a medium bowl and set aside. Mix together the salad dressing ingredients. Pour over the salad, continuing to stir as you pour. Toss together and refrigerate until ready to serve.
