Red Velvet Cake With Butter Frosting
Ingredients
1/2 C. margarine or butter
2 eggs
2 ounces red food coloring
1 tsp. baking soda
1 tsp. salt
1 tsp. vanilla
1 1/2 C. sugar
2 Tbsp. cocoa
1 C. buttermilk
1 Tbsp. cider vinegar
2 1/4 C. sifted cake flour
Butter Frosting:
3 Tbsp. butter; softened
1 1/2 C. sifted powdered sugar divided
Pinch of salt
1 Tbsp. milk
3/4 tsp. vanilla extract
Cooking Instructions
Cream margarine or butter until smooth and creamy; add eggs and beat until well mixed. Stir the cocoa into food coloring add to creamed mixture. Beat until color is well blended. In a small bowl, combine buttermilk, baking soda, vinegar and salt. Add to the cocoa mixture; Beat 2 minutes. Add flour gradually, beating after each addition. Add vanilla. Pour into two well-greased, floured 9 inch cake pans. Bake at 350 about 30 minutes or until done. Cool slightly. Remove from pan to cooling rack and allow to cool completely. Frost with butter frosting. Butter Frosting: Combine butter, 1/2 C. sugar, and salt, creaming with electric mixer until light and fluffy. Add remaining sugar alternately with milk, beating until smooth enough to spread. Add vanilla; beat well.
