Red Beans With Rice
Ingredients
2 C. dried red beans or kidney beans
6 C. water
1/2 C. bacon drippings
1 onion
hot cooked rice
Cooking Instructions
Wash the beans well until water is clear. Drain. Put the beans in a large bowl and add the 6 cups of water. Heat the bacon drippings in a large kettle or Dutch oven and cook the onion in it gently, stirring occasionally, until onion is amber-colored. Add the beans with their water and bring to a boil. Partially cover and cook for 3 to 4 hours or until beans are thoroughly tender and mash easily. If necessary, add more water as the beans cook and stir beans occasionally to prevent them from sticking. When ready to thicken, mash a few beans to thicken the lot. Serve over hot cooked rice.
