Quick White Cake
Ingredients
2 C. sifted cake flour
1 tsp. salt
1 1/2 C. sugar
1/2 C. vegetable oil
1 C. skim milk
3 tsp. baking powder
4 egg whites
1 tsp. vanilla
Margarine (optional)
Cooking Instructions
Preheat oven to 350. Prepare a 10-inch tube pan or two 8-inch layer pans by greasing lightly with oil or margarine and dusting with flour. Sift together in a mixing bowl the flour, salt, and sugar. Add the oil and 2/3 C. of the milk. Stir until the flour is dampened and beat 1 minute, Stir in the baking powder and add the remaining 1/2 C. milk, the egg whites, and vanilla. Beat 2 minutes. pour into the pans and bake 25-40 minutes.
