Quick Cranberry Cobbler
Ingredients
1 orange, with thick skin
1 C. water
1/2 C. granulated sugar replacement
4 C. cranberries
1 Tbsp. butter
1 package biscuit dough, to make 8 biscuits
Cooking Instructions
Grate the orange rind and juice the orange. Combine orange juice, grated rind, water, sugar replacement, cranberries and butter in a saucepan. Bring to a boil and cook for 1 minute. Spoon cranberries evenly among 8 well-greased baking dishes, or place in a casserole. Top the sauce with unbaked biscuits. Bake at 450 degrees F. for 10 minutes. Reduce heat and bake at 350 degrees F. for 20 minutes longer.
