Pumpkin Raisin Muffins
Ingredients
1-1/4 C. whole wheat flour
1/2 C. wheat germ
2 tsp. baking soda
3/4 tsp. cinnamon
2 large egg whites
1/2 C. canned pumpkin, not pie mix
1 tsp. vanilla
3/4 C. frozen unsweetened apple juice concentrate, thawed
1/4 C. raisins
Cooking Instructions
Combine all dry ingredients. Combine egg whites, pumpkin, vanilla and apple juice concentrate. Add to dry ingredients until just moistened. Fold in raisins. Spray muffin tin with nonstick vegetable coating. Bake at 375 degrees F. for 15 to 20 minutes.
