Pumpkin Raisin Bran Muffins
Ingredients
3/4 C. whole wheat flour
1/2 tsp. baking soda
1 tsp. baking powder
1 tsp. cinnamon
1 tsp. ginger
1 tsp. cloves
1 tsp. nutmeg
1-1/2 oz. bran cereal flakes, crushed
1 egg or egg substitute
2 Tbsp. applesauce or vegetable oil
1 tsp. vanilla
1 can pumpkin (1 pound) not pie
Filling:
1/4 C. sugar or sweetener equal to 12 tsp. sugar
1/4 C. plus 2 Tbsp. raisins
Cooking Instructions
Preheat oven to 375 degrees F. In large bowl, combine flour, baking soda, baking powder, and spices. Stir in cereal. In a medium bowl, combine remaining ingredients, except raisins. Beat with fork or whisk until well blended. Add wet mixture and raisins to dry ingredients, stirring until all ingredients are moistened. Divide batter evenly among 6 nonstick muffin C., or ones that have been sprayed with nonstick cooking spray. Bake 20 minutes, or until a toothpick inserted in the center comes out clean. Remove to a rack to cool.
