Pumpkin Orange Cake
Ingredients
2 1/2 C. flour
2 tsp. pumpkin pie spice
1 1/4 tsp. baking powder
3/4 tsp. baking soda
3/4 tsp. salt
1/2 C. butter or margarine; soften
2 C. sugar
3 eggs
16 ounce solid pack pumpkin
1/2 C. orange juice concentrate thawed
1 Tbsp. grated orange peel
Glaze
1 C. powdered sugar
2 Tbsp. orange juice
1/4 C. walnuts; chopped (optional)
Cooking Instructions
Combine flour, pumpkin pie spice, baking powder, baking soda and salt in a small bowl. Beat butter and sugar in large mixer bowl until crumbly. Beat in eggs, pumpkin, orange juice concentrate and orange peel. Beat in flour mixture. Pour into greased and floured 13×9 inch pan. Bake in preheated 350 oven for 40-45 minutes or until wooden pick inserted in center comes out clean. Cool completely on wire rack. Spread Glaze over cooled cake; sprinkle with nuts. Glaze: Combine 1 C. sifted powdered sugar and 2 Tbls. orange juice in small bowl; stir until smooth.
