Pudding Rich Lemon Ring Cake
Ingredients
1 package lemon pudding cake
1 small package lemon instant pudding
1 C. water
1/4 C. oil
4 eggs
Glaze:
1/2 C. prepared frosting mix
1 tsp. lemon rind
Cooking Instructions
Heat oven to 350. Generously grease and flour (I use Pam and no Flour) Bundt pan. In a large bowl, combine cake ingredients at low speed until blended, beat 2 minutes at high speed. Pour batter into greased and floured pan. Bake 45 to 55 minutes or until tooth pick comes out clean. Cool 30 minutes then invert onto serving plate. Cool completely. Glaze: Heat frosting in small pan until melted. Stir in lemon peel and spoon glaze over cake, allowing some to run down sides.
