Ingredients

56 oz. canned cut sweet potatoes,
drained
1/4 C. sugar
1/4-1/3 C. orange juice
3 tsp. margarine melted
1 tsp. salt
1/2 tsp. nutmeg
1/2 tsp. ginger
1/8 tsp.

Cooking Instructions

Mash sweet potatoes in a large bowl. Stir in sugar and next 6 ingredients. Spoon into a lightly greased 7×11″ baking dish. Drizzle with 1 Tbsp. melted butter and sprinkle with orange rind. Bake at 350
