Mashed Sweet Potatoes
Ingredients
3 C. cooked, mashed sweet potatoes (3-4 med sized)
1 C. sugar
2 eggs
1 tsp. vanilla
1/3 C. milk
1/2 C. butter or margarine, melted
Topping:
1 C. firmly packed brown sugar
1/3 C. flour
1/3 C. melted butter or margarine, melted
1 C. finely chopped pecans
Cooking Instructions
Combine sweet potatoes, sugar, eggs, vanilla, milk and 1/2 C. melted butter. Beat with electric mixer until mostly smooth. Spoon in to a greased 2 qt shallow casserole dish. Mix together topping ingredients, sprinkle over potatoes. Bake at 350 for 30 minutes. Serves 8-10.
