Potato Pancakes
Ingredients
2 1/2 C. grated raw potatoes (about 3 med.)
1 tsp. salt
Dash of pepper
2 eggs
2 Tbsp. flour
1 Tbsp. finely chopped onion
Cooking Instructions
Combine all ingredients in a bowl. Drop by spoonfuls into a lightly oiled hot skillet. Fry until brown on one side, then turn and brown on other side. Good served with syrup, ketchup or cheese sauce. Serves 4. OPTION: Add 1 cup finely chopped turkey, chicken, or ham. Good with cranberry sauce.
