Potato Creole
Ingredients
1/4 C. vegetable oil
3 potatoes, peeled and sliced
1 onion, sliced
2 C. tomatoes, chopped
salt and freshly ground black pepper, to taste
1 tsp. dried thyme
1 pinch cayenne pepper
Cooking Instructions
Heat oil in a large skillet on medium heat. Add potatoes and onion; Saute for 10 minutes. Add tomatoes, salt, pepper, thyme and cayenne. Bring to a boil; reduce heat. Cover and simmer for 30 minutes, or until potatoes are tender and sauce has thickened.
