Potato Cheese Pie
Ingredients
Crust:
2 or 2 1/2 C. cold mashed potatoes
2 Tbsp. flour
1 tsp. baking powder
1 egg
2 Tbsp. butter, melted
salt and pepper
Filling:
2 eggs
1 C. cream
salt and pepper
3/4 C. Velveeta cheese, grated
Cooking Instructions
Mix all the crust ingredients thoroughly and pat into a large greased pie plate as if dough. For the filling, beat the eggs, then stir in cream and seasonings. Pour this into the potato crust and sprinkle the top with cheese. Bake at 350° for 20 minutes or until a knife inserted in the center comes out clean.
