Porridge Cake
Ingredients
Cake
1/2 C. margarine, softened
1 C. granulated sugar
1 C. brown sugar
2 eggs
1 tsp. vanilla
1-1/2 C. flour
1 tsp. baking soda
1 C. of quick-cooking oats
1-1/4 C. boiling water
Topping:
1/4 C. butter, melted
1/2 C. brown sugar, packed
3 Tbsp. cream
3/4 C. coconut
Cooking Instructions
In a large bowl, cream margarine and sugars together, then add eggs and vanilla. Beat well. Stir in remaining ingredients until well mixed. Put into greased 9-inch square pan. Bake at 350 degrees for 50 minutes. Topping: Combine all topping ingredients and spread over warm cake. Place under broiler for 2-3 minutes. Watch carefully!
