Pork Chops With Sweet And Sour Cabbage
Ingredients
4 pork chops
2 Tbsp. water
1/2 small head
2 Tbsp. vinegar
1 Tbsp. dijon mustard
1 1/2 tsp. sugar
1/8 tsp. salt
1/8 tsp. caraway seed
black pepper to taste
2 small green apples, cored, in thin wedges
1/3 C. light or dark raisins
red or green cabbage
Cooking Instructions
Trim fat from chops and either place on unheated broiler pan rack and broil 5 inches from heat for 20-25 minutes. until not pink, turning once or Brown in no-stick fry pan and braise in a little water until cooked. Meanwhile, in Microwave dish or saucepan, combine water and cabbage. Microwave, covered on High for 7-8 minutes until almost tender, stirring once. Drain, if needed. In a medium mixing bowl, gradually stir together vinegar and mustard. Stir in sugar, salt, caraway seed and pepper to taste. Add apple wedges and raisins. Toss to coat. Add to cabbage. Toss. Cook, oh High in Microwave for 2-3 minutes until apples are crisp-tender and mixture is heated through. Serve chops over cabbage.
