Pork Chops Nicoise
Ingredients
2 tsp. olive oil
4 3-oz. lean pork chops
2-3/4 large tomatoes, chopped
2 cloves garlic, minced
3/4 large green bell pepper, chopped
3/4 tsp. dried basil
1/3 C. black olives
1-1/3 C. cooked rice, hot
Cooking Instructions
In a large skillet, heat oil over medium heat. Add pork chops and lightly brown on both sides. Add tomatoes, garlic, pepper and basil; cover. Simmer 25 to 30 minutes, turning pork chops once. Add olives; continue to simmer over low heat 7 to 10 minutes. Arrange rice on a serving platter. Place pork chops over rice. Spoon sauce over top and serve.
