Pork Chop Onion Rice Bake
Ingredients
6 pork chops (1 to 1 1/2-inches thick)
1 C. uncooked rice
1 envelope onion soup mix
1 can (4 ounce.) mushrooms
4 Tbsp. diced pimento
Cooking Instructions
Brown chops. Spread rice in bottom of a 13 1/2 x 9 x 2 inch baking dish. Reserve 1 Tbls. of seasoning from onion soup mix. Sprinkle remaining mix over rice. Drain mushrooms, saving liquid. Distribute mushrooms and pimento over rice. Add hot water to mushroom liquid to make 3 C.. Pour over rice. Arrange chops on top of rice. Sprinkle chops with reserved seasoning. Cover tightly with foil. Bake at 350 degrees for 45 to 60 minutes, or until tender. Remove foil and continue cooking 10 minutes or until excess liquid is gone.
