Pork Chop Fried Rice Casserole
Ingredients
1 3/4 C. water
1 1/2 C. uncooked minute rice
4 slices bacon
2 beaten eggs
2 Tbsp. water
1/4 C. chopped green onion
3 Tbsp. soy sauce
4 rib pork chops
Cooking Instructions
In 1-quart casserole, micro cook the water, covered, on maximum power until boiling, 4 minutes. Stir in rice, cover and set aside. In 10 x 6 x 2-inch baking dish, micro cook the bacon, covered with paper toweling, on maximum power for 3 1/2 to 4 minutes or until crisp. Remove bacon, reserving 1 Tbls. drippings in baking dish. Crumble bacon and set aside. In small glass bowl, combine eggs and remaining water. Cook on maximum power until eggs puff up, 1 1/2 minutes. Cut into narrow strips. Into drippings in baking dish, stir rice, bacon, eggs, onion and soy sauce. Place chops atop rice. Brush with soy sauce and season with salt. Cook, covered, on maximum power for 5 minutes. Turn chops; cook 6 more minutes.
