Porcupine Meatballs
Ingredients
1 pound ground beef
1 pound lean pork or use all beef
1 beaten egg
1/2 C. milk
2/3 C. raw rice
1 tsp. salt
Sauce:
2 1/2 C. tomatoes
1 1/2 C. water or broth
2 Tbsp. chopped onion
1 tsp. salt
1 tsp. basil
1 bay leaf
Cooking Instructions
Mix meats, add egg, milk, rice and salt. Form into 1 1/2 inch balls and brown in a large skillet sprayed with nonstick cooking spray. Combine tomatoes, water, onion, salt, basil and bay leaf in the crock pot. Drain excess grease from meatballs and add to sauce mixture. Cover and cook for 7 to 9 hours on low. Discard bay leaf before serving.
