Poppy Seed Cake
Ingredients
1/4 C. poppy seeds
1 C. buttermilk
1 C. margarine,
1 1/2 C. sugar
4 eggs
1 tsp. vanilla
2 1/2 C. flour
1/2 tsp. salt
1 tsp. soda
Cooking Instructions
Preheat oven to 350. Butter well a 10 inch bundt pan. Cream well the margarine. Add sugar. Beat until fluffy. Add the eggs one at a time. Beat well after each addition. Beat in the vanilla. Sift together the flour, salt and the soda. Soak together overnight: Add dry ingredients to butter mixture, alternating with buttermilk mixture. 1/2 C. sugar 1 1/2 Tbls. cinnamon mix together, set aside. Sprinkle buttered bundt pan with some of the cinnamon sugar mixture, just enough to coat. Layer the batter in the bundt pan with layers of cinnamon sugar in between. Bake at 350 degrees for 50-55 minutes. Test with tester for doneness. Let cool on a rack for about 20-30 minutes before inverting on a plate.
