Popped Wild Rice
Ingredients
2 C. wild rice
salt to taste
Cooking Instructions
Wash wild rice well, 2 or 3 times. Dry on a cloth towel. Heat deep fat to 375º. Using a strainer with fine mesh wire (4″ to 5″ across and not over 3″ deep) lower 2 to 3 Tbsp. rice at a time into the hot fat. Let cook until it pops, which is almost immediately. Drain on a paper towel, salt lightly. Place in a covered oven-safe container. Heat before serving.
