Plaki Baked Fish
Ingredients
6 or 8 fish fillets (no more than 1
inch thick)
1 lg. onion (chopped)
3 fresh tomatoes (peeled and chopped)
1/2 tsp. garlic powder
2 Tbsp. chopped dry parsley
2 tsp. oregano
1 tsp. pepper
1/2 tsp. salt
1/2 C. red wine
Cooking Instructions
Saute onion in 2 tablespoons vegetable oil until soft and translucent. Stir in garlic, tomatoes, parsley, oregano, pepper, salt and wine. Bring to a boil, stirring constantly, remove from heat. Place fillets in one layer in a baking dish or casserole. Pour sauce over fish. Bake in preheated 375 degree oven for 45 minutes.
