Pineapplecoconut Coffee Cake
Ingredients
1/3 C. flaked coconut
1/4 C. chopped nuts
1/4 C. sugar
2 Tbsp. firm margarine or butter
2 C. Bisquick baking mix
1/4 C. sugar
1/2 tsp. ground ginger
2 eggs
1 can (8 oz.) crushed pineapple in juice, undrained
Cooking Instructions
Heat oven to 400 degrees. Grease square pan, 8x8x2 inches. Mix coconut, nuts, 1/4 cup sugar and the margarine; reserve. Mix remaining ingredients; beat vigorously 30 seconds. Spread in pan. Sprinkle with coconut mixture. Bake until light brown, 25 to 30 minutes. Serve warm. 9 servings. High Altitude Directions (3500 to 6500 feet): Decrease second 1/4 cup sugar to 2 tablespoons. Bake about 30 minutes.
