Pineapple Walnut Cake 2
Ingredients
Cake
2 C. sugar
2 C. flour
2 tsp. baking soda
2 eggs
1 C. pecans or walnuts
1 can undrained crushed pineapple (20 ounce can)
Topping:
1 stick oleo or butter (we use butter)
1 C. sugar
3/4 C. evaporated milk
Cooking Instructions
Mix all above ingredients in mixing bowl until blended. Bake in a greased 9 x 13 pan at 350 for 30 minutes. The cake will take on a dark brown appearance. Let cake cool before topping with topping recipe. Topping: Cook above topping ingredients on stovetop for approximately 10 minutes on medium heat. Be mindful, as this mixture can boil over and make a regrettable mess. You may also add 1 C. of nuts to topping solution as an option.
