Pineapple Pound Cake
Ingredients
Cake
1/2 C. butter or shortening
3 large eggs
1/2 C. unsweetened frozen pineapple
Juice concentrate, thawed
1/2 C. water
2 1/2 C. white flour
1 tsp. baking soda
1 tsp. baking powder
Cooking Instructions
In a large mixing bowl beat together butter (or shortening), eggs, pineapple juice concentrate, and water until thoroughly blended. Add flour, baking soda, and baking powder; beat just until blended. Spoon mixture evening into a 9 x 5 inch oiled and floured loaf pan. Bake in a preheated oven at 350 for 45 minutes or until knife inserted comes out clean. Cool on a wire rack.
