Monastery Shepherd’s Pie
Ingredients
3 lb. ground beef
2 (12 oz.) cans creamed corn
1 (12 oz.) can whole corn, drained
1/2 C. chopped onion
8 C. mashed potatoes
1 egg
1 clove garlic
2 tsp. butter or margarine
3 Tbsp. grated Parmesan cheese
Cooking Instructions
Brown ground beef along with diced garlic. Drain off fat and place meat in 10″ x 15″ inch pan. Cover the beef with the corn. Mix the onions and the egg in the potatoes and place on top of corn. Dot with butter and sprinkle with grated cheese. Salt and pepper to taste. Bake at 350º for 40 minutes. Serves 10-12.
