Pie Plate Potato Pizza
Ingredients
1 large potato, sliced
1/2 C. canned tomatoes, drained, diced
4 large mushrooms, sliced thinly
2 Tbsp. minced onion
1/4 tsp. crushed basil leaves
1/4 tsp. crushed thyme
1 small garlic clove, minced
5 stuffed green olives, sliced
5 oz. low fat mozzarella, grated
Cooking Instructions
Spray a pie plate with nonstick spray. Slice potato about 1/4-inch thick. Lay slices on bottom of pan, overlapping slightly to form a crust. Spray with nonstick spray. Bake at 400 degrees F. for 40 min until slightly browned and potatoes are cooked, checking after about 10 minutes. Combine tomatoes, mushrooms, onion and seasonings. When crust is ready, spread with mushroom mixture. Top with olives then cheese. Bake for 10 minutes.
