Perogie Casserole
Ingredients
7 medium potatoes, peeled and halved
16 oz. box plain lasagna noodles
(do not use the no cooking required variety0
1 1/2 C. grated sharp cheddar cheese
salt and pepper to taste
3 Tbsp. butter or margarine
1/3 C. warm milk
Cooking Instructions
Boil the potatoes until tender. Meanwhile, prepare noodles as per package instructions. Drain the noodles and rinse in cold water. Drain the potatoes and mash with the butter, milk and 1 C. of cheese. Season with salt and pepper to taste. Layer the noodles and potato mixture in a greased lasagna pan, beginning and ending with the potatoes. Top with remaining cheese. Bake 350ΒΊ for 40 minutes and serve with sour cream. Serves 4 – 6 as a main course.
