Peanut Butter Buttermilk Chocolate Cake
Ingredients
2 C. flour
2 C. sugar
1/2 Tbsp. salt
1/2 C. margarine
1 C. water
1/2 C. vegetable
Shortening
3 Tbsp. cocoa
2 eggs, beaten
1 Tbsp. baking soda
1/2 C. buttermilk
1 Tbsp. vanilla
2 Tbsp. peanut butter
Icing:
1/2 C. margarine
3 Tbsp. cocoa
16 ounce box powdered sugar
1 tsp. vanilla
1/2 C. chopped nuts (optional)
6 Tbsp. milk
Cooking Instructions
Place in large mixing bowl, flour, sugar, and salt. Place in saucepan, margarine, water, shortening, and cocoa. Bring to boil and pour over flour mixture then mix well. Place in another bowl, eggs, baking soda, buttermilk, and vanilla. Mix well and add mixture to hot mixture. Bake in greased floured 9×13-inch pan at 350 for 15-20 minutes. While cake is hot spread very thin layer peanut butter on it. Icing: Melt margarine plus cocoa in saucepan, but do not boil, Mix well. Take off heat; add powdered sugar, vanilla, nuts, and milk (add just enough milk to make icing thin enough to spread). Mix well. Ice cake while hot.
