Peaches And Honey Shortcakes
Ingredients
1 1/4 C. fat free yogurt, lemon flavored
3 Tbsp. light brown sugar
2 Tbsp. w fat sour cream
4 C. sliced peaches, peeled
3 Tbsp. honey
2 3/4 C. all-purpose flour
2 Tbsp. light brown sugar
4 tsp. baking powder
3/4 tsp. ground cinnamon
1/2 tsp. salt
5 Tbsp. margarine; chilled and cut in; small pieces
1 C. skim milk
Vegetable cooking spray
Cooking Instructions
Combine lemon yogurt and next 2 ingredients in a bowl; stir well. Cover and chill at least 30 minutes. Combine sliced fresh peaches and honey in a bowl; toss gently, and set aside. Combine flour and next 4 ingredients in a bowl; cut in margarine with a pastry blender until mixture resembles coarse meal. Add milk; stir just until dry ingredients are moistened. Turn the dough out onto a lightly floured surface and knead 4 or 5 times. Roll dough to 1/2 inch thickness; cut with a 3-inch biscuit cutter. Place on a baking sheet coated with cooking spray. Bake at 450 for 9 minutes or until golden. To serve, split biscuits; top each with 1/3 C. peach mixture and 2 Tbls. of yogurt mixture.
